
You won’t believe this Papaya Fruit Basket with Hint of Curry Yogurt Sauce recipe; the touch of curry and richness of yogurt is just enough to wake you up, and remind you why the morning is the best time of day. Ingredients:
2 ripe papayas
2 cups red seedless grapes
1 cup low fat or fat free plain yogurt
1 tablespoon honey
1/4 teaspoon curry powder
1 tablespoon chopped crystallized ginger
1/4 cup chopped Brazil nuts, toasted
Directions:
Cut papayas in half lengthwise; scrape out seeds and arrange cut side up in shallow bowls. Fill cavities with grapes. Combine yogurt, honey and curry powder; mix well. Drizzle over fruit; top with ginger and nuts.
Tips:
If you can find it, use ginseng honey. Its bright, sprightly flavor lightens the honey and makes the fruit sparkle.
Substitutions:
Brown sugar may replace the honey, cinnamon may replace the curry powder; and toasted cashews, almonds or mixed nuts may replace the Brazil nuts. Ground cinnamon is especially sweet here.
