Maple Oatmeal with Prunes and Plums

Serving Size:

Ingredients:

3 cups fat free milk
3 cups old fashioned oats, uncooked
½ cup apple cider or juice
4 small plums, seeded and diced
1 cup diced dried prunes
3 tablespoons pure maple syrup
¼ teaspoon ground cinnamon

Directions:

Bring milk just to a simmer in a medium saucepan; stir in oats and simmer 5 to 8 minutes or until thickened, stirring occasionally. Stir in apple cider, then plums, prunes and syrup; heat through. Transfer to serving bowls; top with cinnamon.

Substitutions:

4 apricots or 2 nectarines or peaches may replace the plums and dried apricots or mixed fruit bits may replace the prunes. Nutmeg may replace the cinnamon.
