Hot & Hearty Fig & Apricot Wheatena

This recipe for Hot & Hearty Fig & Apricot Wheatena is a delicious way to start you day and gives you all the necessary to energy you need.

Preparation Time:  5 minutes
Cooking Time:  10 minutes
Servings  4
Serving Size:  about 5 cups cereal

Ingredients:

about 5 cups cereal1 cup uncooked wheat cereal such as Wheatena brand
2 cups each: nonfat vanilla soymilk and water
½ cup each: diced dried figs and diced dried apricots
½ teaspoon salt
2 tablespoons honey
Toppings: ¼ cup each: nonfat vanilla soymilk and toasted sliced unblanched almonds

Directions:

Place a medium saucepan over medium heat. Add cereal; cook 4 minutes or until fragrant, stirring occasionally. Add milk, water, figs, apricots and salt. Bring to a simmer; cook about 5 minutes or until thickened, stirring occasionally. Transfer to four warmed serving bowls; let stand 1 or 2 minutes (cereal will be very hot). Serve with toppings.

Substitutions:

1 cup chopped dates or dried mixed fruit bits may be substituted for the figs and apricots. Skim milk plus ½ teaspoon vanilla may be substituted for the vanilla soymilk, and apple pie spice may replace the cinnamon.
