Ingredients:
1/4 cup and 1 tablespoon Dijon mustard, divided (in separate portions)
2 tablespoons white wine (such as a Chardonnay or Pinot Blanc)
1/4 teaspoon Worcestershire sauce
Black pepper to taste
2 tablespoon finely minced shallot, divided
3 tablespoons real maple syrup, divided
4 (4 ounce each) boneless and skinless chicken breast halves or filets, trimmed of all visible fat
Directions:
Combine 1/4 cup of the mustard, wine, Worcestershire sauce, pepper, 1 tablespoon of the shallot, and 12 tablespoon of the maple syrup for marinade in shallow dish. Add chicken pieces and turn to coat thoroughly; let stand for 5 minutes. Preheat charcoal or gas grill . Heat a ridged grill pan. Remove chicken from marinade; discard marinade.Grill or pan-grill chicken 3 to 5 minutes per side or until chicken is no longer pink in center. Meanwhile, in a small bowl, combine the remaining 2 tablespoons of maple syrup, 1 tablespoon of mustard, and 1 tablespoon of shallot. Mix well and serve as a dipping sauce for the chicken.
