Surprising new research shows that celiac disease, the body’s autoimmune reaction to gluten – the protein in wheat, barley and rye – is at least four times more common today than it was 50 years ago.
Common celiac symptoms are fatigue and bloating. Many people who have migraines, osteoporosis, infertility, iron deficiency or depression actually have gluten as the cause.
But 97 percent of people who should be gluten free don’t know it. That’s about three million Americans.
