Does eating more protein–whether steaks and eggs or soybeans and peas–help build muscle mass?

No: beyond approximately 1 gram per kilo of body weight, the calories are just metabolized and stored as fat or used for energy.  The only way to build muscle mass (the actual number of muscle cells you have) is to exercise.
